  • Our TOCS 2008 is a very important offering for our winery, since it reflects our change of approach.

    The winter season was very dry, but in April and especially May rains were abundant. These are important months for the vegetative phase: flushing is nearing its end with full vegetative growth underway. Next comes flowering and finally the fruit, key stages that start to provide an idea of how the season will turn out. We had rains in both June and July, which gave us quite a bit of concern about the health of the vines because of the excessive humidity. However, the rest of the summer up until harvest was more regular with ideal temperatures, especially in terms of the day/night thermal variation, which allowed for excellent maturation.

    Basic information

    • Varieties: Garnacha Negra 65% and Syrah 35%.
    • Production: Each varietal is separately produced. For fermentation, 25% takes place in open 500-litre casks and the rest in stainless steel tanks. Daily pigeage and gentle rémontage.
    • Barrel aging: 14-16 months depending upon the varietal in very lightly toasted Allier French oak barrels. New 300-litre barrels from various cooperages are used for 20%, with the rest in second-year barrels.
    • Alcohol: 15% by volume.
    • Filtering or clarification: No filtering or clarification processes are applied. This means that small amounts of precipitates may develop over time.

    Information on bottling and consumption

    • Bottling: Production of 8,000 bottles in Europea-series Bordeaux bottles. Natrual Flor corks, 49 x 24 mm. Packed in cardboard boxes of 6 bottles. Wooden crates of 6 bottles optional, with the PEFC seal, which certifies that the wood comes from ecologically and sustainably managed forests.
    • Consumption: Service temperature: 16-18 oC. Open the bottle one hour before serving and decant. A Syrah-type wine glass is recommended.

    Tasting note. Elegant, subtle, and very interesting for a 2008.

    Black cherry colour with fine and slow tears. Aromas of mature black fruits (berries, plum). Spicy notes, touches of liquorice with hints of balsamic and mint and with mineral notes as well. Good first impression in the mouth, flavourful and lush. Long finish, with lingering notes of mature fruit, smoke, and minerals.

  • The 2007 TOCS reminds us very much of the 2004 vintage.

    In terms of the weather, we were coming off of a very hot and dry 2006, except for the rains that fell in September. In contrast, 2007 was a much more interesting and favourable year, which allowed good maturity rates. The balance in the maturation of the various parts of the grape was very good and along with a good state of health, this allowed us to calmly wait for just the right “moments” to harvest.

    • Consumption: Serving temperature: 16-18 °C. Open the bottle one hour before serving and decant. A Syrah-type wine glass is recommended.

    Tasting note. With structure, on the way towards elegance.

    Dark cherry colour, almost black, with abundant and slow tears. Aromas of red fruits (cherry and raspberry) and dark fruits (blackberry and blueberry). Notes of balsamic and mint, along with light notes of herbs (sage) and spices (cinnamon), with mineral notes as well.

    Good intensity in the mouth, abundant flavours of red fruits, with good acidity. Abundant tannins, sweet and lush. Fresh and lively.
